CLOS DU FOU
The mouth unfolds its great complexity and its remarkable balance make the Clos du Fou a remarkable wine.
Clos du Fou (ally of the fool) The plot was planted on a very steep hill (300 m) which was said that "if the mules could not climb, no vine can hang on." Which earned him the quibble "ally of the fool".
Grapes : 100% Syrah
Alcool : 14.5 %
Vinification : the organics grapes are hand-harvested at optimum maturity, sorted, destemmed and crushed. Raised in new and one wine barrels for 18 months. Each grape variety is vinified separately and raised accordingly.
Tasting : Syrah vines grown on schist produce a wine that is well structured and balanced, with mineral qualities. A unique cuvée that could only come from the terroir of Faugères, this wine is made from our best Syrah vines. It has a deep ruby robe, and a pronounced yet delicate nose with aromas of violets and black fruit. On the mouth, it has surprising complexity and balance, and good tannic structure. Notes of cocoa, liquorice and coffee enhance the final bouquet.
Service & cellaring : serve between 16 and 18° C, open an hour before and carafe younger vintages. Can be aged for over 20 years
Pairings: red meats, white meat stewed or in sauce, game (not too strong, you’re told), beef or a duck breast.
