In 2015, the cellar was completely renovated and all the equipment was replaced so that each gesture is as precise as possible to sublimate the raw material.
The chai consists of 30 thermoregulated tanks, a nitrogen plant, an independent circuit of cold and hot.
All manipulations are performed to minimize dissolved oxygen.
The barrels are filled by gravity, are cleaned by steam as well as by hot water at high pressure to ensure a high quality wash.
Hygiene prevails to minimize any bacteriological problem. Every tank, every taster, every pump, every material is thoroughly disinfected after each use.
Our bottling chain is completely inert under nitrogen to reduce oxygenation during bottling.
