VALLONGUE ROSE
This cuvee is named after the small creek, VALLONGUE, that runs along the vines from which the grapes come from to elaborate it.
Blend : 50% grenache ; 30 % Mourvèdre ; 20 % Syrah
Alcool : 13 %
Vinification : Traditional vinification. The organic grapes are hand-harvested at optimum maturity, sorted and pressed as whole bunches. Cold racked, fermented in stainless steel tanks and raised on lees for 6 months.
Tasting : A salmon-pink, slightly blue-tinged robe. The nose is subtle, with fruity aromas of raspberry, strawberry, grapefruit and pineapple, and very light floral notes. This mineral, well-balanced and complex wine has similar notes on the palate, which ends on attractive citrus flavours.
Serve and cellaring : Serve between 8 and 10° C. Can be kept for over 3 years
Pairings: Salads and iodized starters such as sea bream carpaccio or calamari ceviche, Asian and oriental dishes
