Finesse, structure, complexity and balance make this cuvée Sous les Rocs a great cuvée
Sous les Rocs evokes what lies beneath the plot from which the vines grow. Sous les Rocs mean under the rocks but the real plot name is called Les Roques which have the same pronunciation.
Blend : 40% Syrah 30% ; Syrah 30% ; Grenache
Alcool : :14.5 %
Vinification : Vinified traditionally. The organics Grapes are hand-harvested at optimum maturity, sorted, destemmed and then crushed. Raised in oak vats, demi-muids and barrels for 18 months. Each grape variety is vinified separately and raised accordingly.
Tasting : A deep ruby robe with hints of violet when young. The nose is deep and charming, with distinct aromas of spice, red fruit, blackcurrant and blackberries, enhanced by a year's raising which intensifies the aromatic complexity. Well-balanced, with mineral notes and smooth, carefully-mastered tannins, this cuvée has very good length and is characterised by its notes of cocoa, coffee, liquorice and red fruit.
Serve & cellaring : Serve between 16 and 18° C, open an hour before and carafe younger vintages. Can be aged for over 15 years.
Pairings: red meats, white meat stewed or in sauce, game (not too strong, you’re told), beef or a duck breast.
